Il s’agit d’une mission de maîtrise d’œuvre complète (BATIMENT et VRD), relative à la construction d’une cuisine centrale d’une capacité de production de 11 430 repas/ jours maximum en liaison froide. En matière de construction, le parti constructif à suivre par le Maitre d’OEuvre est le suivant : - Création d’un bâtiment se développant sur un unique niveau avec plenum technique accessible, - Maîtrise et traitement de l’acoustique intérieure et extérieure (la maitrise d’oeuvre devra présenter les moyens mis en oeuvre à cet effet), - Maitrise des dépenses énergétiques, En termes de besoins spécifiques à intégrer au projet, la MOA a retenu les postulats suivants : - Création d’un logement de fonction (Gardien) - Mise en place d’un chalet de compostage des déchets organiques - Intégration d’un restaurant avec self-service - Intégration d’une salle de réunion L’équipe de cuisine est estimé à 60 personnes travaillant toutes à temps plein.
