Cette consultation a pour objet de définir les conditions dans lesquelles seront exécutées la fourniture et la livraison des repas en liaison chaude destinés à la restauration collective sur le site du groupe scolaire de Martigny-les-Gerbonvaux – 6, rue Roger Richard – 88300 MARTIGNY-LES-GERBONVAUX. La prestation comprend : - l’élaboration des menus en tenant compte des impositions légales et de l’équilibre nutritif, - l’approvisionnement des denrées alimentaires, -la réalisation des repas, conformément aux menus élaborés, respectant les prescriptions quantitatives, qualitatives et nutritionnelles définies dans le CCTP, - le conditionnement des repas cuisinés, - le contrôle microbiologique, - le transport et la livraison sur site des repas en liaison chaude sur le site. - la traçabilité des denrées alimentaires La prestation concerne les repas du midi, les lundi, mardi, jeudi et vendredi et jours d’ouverture exceptionnelle, période scolaire. La livraison des repas (à température de minimum 63°) devra intervenir impérativement avant 12H00 (midi) au plus tard.
